2 people (Great for meal prep snack idea!)
2 (4 ounce) cans of sardines packed in olive oil or water, drained (I used Wild Planet)
Celtic Sea Salt and pepper to taste
2 Tbsp capers, rinsed and drained (organic)
1/4 cup diced red onion (organic)
1/4 cup sliced green olives (organic)
1/4 cup lemon juice (about 2 lemons)
2 Tbsp extra virgin olive oil
4 cups sliced romaine lettuce
couple squeezes of mustard (I used Koop’s Stone Ground)
2 slices gluten-free bread (I am in LOVE with this brand: Katz)
1. In a medium bowl, mash the sardines with a fork.
2. Add a few pinches of salt and pepper, the capers, onion, olives, lemon juice, and olive oil to the bowl and stir.
3. Serve as an open faced Sammy with toasted gluten free bread on a bed of romaine and drizzled with a bit of mustard.
