This slaw is sure to have even my non-beet loving friends licking the bowl!
The crunch of the apple and sweetness of of the honey & carrots pack a powerful flavor punch with this slaw. It’s fresh and vibrant and made for loving your body.
I enjoyed this salad as a side dish for any meal (even breakfast).
If you want to add a lil’ bit of heat, add a pinch of cayenne! Oh yeah babe!

Ingredients:
2 apples (unpeeled if organic), chopped into bit-size pieces (I used Fuji apples)
1 1/2 cups shredded carrots (about 4, grated)
1 1/2 cups shredded beets (about 3, trimmed and grated)
2 Tbsp raw honey
2 Tbsp apple cider vinegar
2 Tbsp extra virgin olive oil
1/2 tsp sea salt or himalayan sea salt
Directions:
1. In a large bowl, stir together apples, carrots, and beets.
2. In a smaller bowl, whisk together honey, vinegar, oil, and sea salt.
3. Toss everything together and garnish with some chopped parsley.
